This rich and flavorful homemade soup is packed with tender beef, fresh vegetables, and savory broth. It’s a classic family favorite—perfect for chilly days or when you need a cozy meal!
Ingredients
✔️ 1½ lbs beef chuck roast or stew meat, cut into small chunks
✔️ 2 tbsp olive oil
✔️ 2 carrots, sliced
✔️ 2 celery stalks, chopped
✔️ 2 potatoes, diced
✔️ 1 cup green beans, trimmed
✔️ 1 (15 oz) can diced tomatoes
✔️ 6 cups beef broth
✔️ 1 onion, finely chopped
✔️ 3 cloves garlic, minced
✔️ 1 bay leaf
✔️ Salt and black pepper, to taste
🌿 Optional Additions:
✔️ Corn, peas, zucchini, or your favorite seasonal vegetables
Instructions
🔹 Step 1: Brown the Beef
1️⃣ Heat 2 tbsp olive oil in a large pot or Dutch oven over medium-high heat.
2️⃣ Add beef chunks, season with salt and black pepper, and sear until browned on all sides (about 5 minutes). Remove and set aside.
🔹 Step 2: Sauté the Aromatics
3️⃣ In the same pot, add onion, carrots, and celery. Sauté for 3-4 minutes until softened.
4️⃣ Stir in garlic and cook for 30 seconds until fragrant.
🔹 Step 3: Simmer the Soup
5️⃣ Return browned beef to the pot.
6️⃣ Add diced tomatoes, beef broth, potatoes, green beans, and bay leaf.
7️⃣ Bring to a boil, then reduce heat to low and simmer for 1 to 1½ hours, or until beef is tender.
🔹 Step 4: Adjust & Serve
8️⃣ Remove the bay leaf and adjust salt & pepper to taste.
9️⃣ Stir in any optional vegetables and let cook for 5-10 more minutes.
