Craving the cozy flavors of apple pie but don’t want a huge dessert? This small apple pie recipe is perfect for one or two people, packed with tender spiced apples, and wrapped in a buttery, flaky crust. Ready in under an hour, it’s a simple yet satisfying homemade treat.
Ingredients
For the Pie Crust
1 cup all-purpose flour
6 tbsp unsalted butter (cold, cubed)
1/4 tsp salt
3–4 tbsp ice water
For the Apple Filling
1 small apple (Granny Smith or Honeycrisp), peeled and diced
2 tbsp granulated sugar
1 tbsp brown sugar
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/2 tsp lemon juice
1 tsp cornstarch (or flour)
1/2 tsp vanilla extract
1 tbsp butter (cubed)
For the Egg Wash
1 egg yolk
1 tbsp milk or water
Instructions
Step 1: Make the Dough
In a bowl, mix flour and salt.
Cut in cold butter until crumbly.
Add ice water, one spoon at a time, just until the dough comes together.
Shape into a disk, wrap, and chill for at least 30 minutes.
Step 2: Prepare the Filling
In a bowl, toss diced apples with sugars, cinnamon, nutmeg, lemon juice, vanilla, and cornstarch.
Let sit for 5–10 minutes to soak in flavor.
Step 3: Assemble the Pie
Preheat oven to 375°F (190°C).
Roll dough to about 1/8-inch thickness.
Press into a small pie dish and fill with apple mixture. Dot with butter.
Cover with top crust or lattice, seal edges, and brush with egg wash.
Step 4: Bake & Serve
Bake on a baking sheet for 25–30 minutes until golden and bubbling.
Cool for 10–15 minutes before enjoying!
