  • 1 cup all-purpose flour

  • 34 tbsp ice water

For the Apple Filling

  • 1 small apple (Granny Smith or Honeycrisp), peeled and diced

  • 2 tbsp granulated sugar

  • 1 tbsp brown sugar

  • 1/2 tsp ground cinnamon

  • 1/4 tsp nutmeg

  • 1/2 tsp lemon juice

  • 1 tsp cornstarch (or flour)

  • 1/2 tsp vanilla extract

  • 1 tbsp butter (cubed)

For the Egg Wash

  • 1 egg yolk

  • 1 tbsp milk or water


Instructions

Step 1: Make the Dough

  1. In a bowl, mix flour and salt.

  2. Cut in cold butter until crumbly.

  3. Add ice water, one spoon at a time, just until the dough comes together.

  4. Shape into a disk, wrap, and chill for at least 30 minutes.

Step 2: Prepare the Filling

  1. In a bowl, toss diced apples with sugars, cinnamon, nutmeg, lemon juice, vanilla, and cornstarch.

  2. Let sit for 5–10 minutes to soak in flavor.

Step 3: Assemble the Pie

  1. Preheat oven to 375°F (190°C).

  2. Roll dough to about 1/8-inch thickness.

  3. Press into a small pie dish and fill with apple mixture. Dot with butter.

  4. Cover with top crust or lattice, seal edges, and brush with egg wash.

Step 4: Bake & Serve
