Description

This classic Italian pastina soup is warm, creamy, and soothing—perfect for chilly days or whenever you need a comforting meal. Made with tiny star-shaped pasta, rich broth, and a silky egg-parmesan mixture, it’s a simple yet satisfying dish loved by all!

Ingredients

✔️ 1 cup pastina pasta (tiny star-shaped pasta)
✔️ 4 cups chicken broth (or vegetable broth for a vegetarian option)
✔️ 1 large egg
✔️ 2 tbsp grated Parmesan cheese
✔️ 1 tbsp butter (optional, for extra richness)
✔️ Salt and black pepper, to taste
✔️ Fresh parsley, chopped (optional, for garnish)

Instructions

🔹 Step 1: Boil the Broth
1️⃣ In a medium saucepan, bring chicken broth to a gentle boil over medium heat.

🔹 Step 2: Cook the Pastina
2️⃣ Stir in the pastina pasta and cook for 4-5 minutes, stirring occasionally to prevent sticking.

🔹 Step 3: Prepare the Egg Mixture
3️⃣ While the pastina cooks, whisk egg and Parmesan cheese in a small bowl until smooth.

🔹 Step 4: Add the Egg Mixture
4️⃣ Reduce heat to low and slowly pour the egg mixture into the soup while stirring continuously.
5️⃣ The residual heat will gently cook the egg, creating a silky, creamy texture.

🔹 Step 5: Add Butter & Seasoning
6️⃣ Stir in butter (if using) and season with salt and pepper to taste.

🔹 Step 6: Garnish & Serve
7️⃣ Ladle into bowls and garnish with fresh parsley, if desired. Enjoy hot!
