  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup buttermilk (or milk with 1 tsp lemon juice)
  • 2 large eggs
  • 2 tbsp melted butter (plus more for cooking)
  • 1 tsp vanilla extract
  • ½ cup mini chocolate chips

Toppings (optional):

  • Maple syrup
  • Fresh fruit
  • Whipped cream
  • Extra chocolate chips

Instructions

1️⃣ Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2️⃣ Prepare wet ingredients: In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla extract until smooth.
3️⃣ Combine & fold in chocolate chips: Gradually add wet ingredients to the dry, stirring gently until just combined (don’t overmix). Fold in the chocolate chips.
4️⃣ Cook the pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter. Pour ¼ cup batter for each pancake and cook for 2-3 minutes, until bubbles form on top. Flip and cook for another 1-2 minutes until golden brown.
