These cheesy mashed potatoes are smooth, buttery, and loaded with gooey melted cheese—the perfect side dish for any meal!
Ingredients
✔️ 2 lbs (900g) potatoes (Russet or Yukon Gold), peeled and cubed
✔️ 4 tbsp butter
✔️ ½ cup (120ml) milk (warm)
✔️ 1 cup (100g) shredded cheddar cheese (or your favorite cheese)
✔️ ½ cup (50g) shredded mozzarella cheese (for extra creaminess)
✔️ ½ cup (120ml) sour cream (optional, for extra richness)
✔️ 2 cloves garlic, minced (optional, for added flavor)
✔️ Salt and black pepper, to taste
✔️ Fresh chives or parsley, chopped (for garnish)
Instructions
🔹 Boil the Potatoes:
1️⃣ Place cubed potatoes in a large pot and cover with cold water. Add a pinch of salt.
2️⃣ Bring to a boil over medium-high heat and cook for 15-20 minutes, or until fork-tender.
3️⃣ Drain and return to the pot.
🔹 Mash & Mix:
4️⃣ Add butter, warm milk, and sour cream (if using) to the potatoes.
5️⃣ Mash until smooth and creamy (use a potato masher or hand mixer for extra fluffiness).
🔹 Add the Cheese:
6️⃣ Stir in cheddar and mozzarella cheese, mixing until melted and well combined.
7️⃣ Season with salt, black pepper, and garlic (if using) to taste.
🔹 Serve & Enjoy:
8️⃣ Garnish with fresh chives or parsley, and enjoy warm!
